Company Chicken Casserole



This is one of the first things that I learned how to cook when I was newly married.  The recipe comes from a dear lady, named Sharon.  This casserole has survived the test of time, and is still a family favorite.  Plus, if you are entertaining, it's easy to make a day ahead of time to help keep the stress level down.  Thank God for all of you special women who helped me with cooking!

 
Company Chicken Casserole

1 Wal-Mart bag of chicken thighs
1 teaspoon salt
1 pint fresh mushrooms, cleaned & sliced
2 cans green beans (reserve liquid from one can)
1 can cream of chicken soup
1 can cream of mushroom soup
4 cups shredded cheddar cheese
Parmesan cheese
1 large can French’s fried onions
Salt & Pepper to taste

Spray crock pot with vegetable oil.  Place chicken thighs in crock pot & add ½ cup water & 1 teaspoon salt. Cook all day on low.  Remove chicken from the crock pot & let thighs rest for 20 minutes.  De-bone & de-skin.  Place ½ of the chicken into buttered 9x13 casserole dish.  Cover with layers of ½ the beans, ½ the soups, ½ the mushrooms, ½ the cheeses, and salt & pepper to taste. Top with remaining chicken and repeat layers. Pour the liquid from one of the cans of green beans evenly over the casserole.  Bake uncovered for 45 minutes at 350.  Sprinkle with fried onions.


Oh, so so yummy!  I like to serve this with wheat rolls & fresh fruit.  ~  Helps to balance out the meal and make it a bit more healthy.
