Ingredients:

1 - lb. ground beef, cooked & drained

1 & 1/2 - lbs. cut up, cooked & drained bacon

1 - lb. Costco, Kirkland brand, fully cooked, smoked, pulled pork

4 - 28 oz. cans, Bush's, original baked beans

1 - large, chopped, orange (or red) bell pepper

4 - Tablespoons chopped, dried onion

1 & 1/2 - cups light brown sugar

1 - cup dark, Karo syrup

1 - 45 oz. bottle, KC Masterpiece, original BBQ sauce


Directions:

Mix all ingredients together in a large mixing bowl.  I need to use my large roasting pan, because it's the only thing in my kitchen that is big enough.  Bake in a roasting pan at 350 degrees for 2 & 1/2 hours.  Let stand for 10 - 15 minutes before serving.  Or ... Most of the beans will fit into a large crock pot.  Bake on low for 2 -3 hours before serving.  The rest of the baked beans will fit into an empty, large, cool whip container.  These can be frozen for use at a later date.

Mountain Mama's Frozen Mocha Cheesecake

Super Yummy & a Huge Family Favorite


I found this recipe in the Great American Brand Name Recipes Cookbook.  I tried to find the exact recipe to link it here, but I was not able to locate it.  I have tweaked the recipe and mine is as follows:

Ingredients:

1 & 1/4 cups chocolate graham cracker crumbs
1/4 cup melted butter
1/4 cup sugar
1/4 cup mini chocolate chips

1 & 1/2 cups whipping cream

1 & 1/2 packages (12 oz. total) cream cheese, softened
1 & 1/2 cans (21 oz. total) condensed milk
1 cup chocolate flavored syrup
2 Tablespoons instant coffee
1 teaspoon hot water

Directions:

Lightly spray the bottom and sides of 10" springform pan with vegetable spray. Combine chocolate graham cracker crumbs, melted butter and sugar.  Mix in mini chocolate chips.   Press firmly on bottom and up sides of 10"springform pan. You won't be able to get the crumbs all the way up the sides ... only a little way.

Whip the whipping cream until a good peak forms.  Set aside.

In large mixer bowl, beat cream cheese until fluffy. Add sweetened condensed milk and beat until smooth.  Add chocolate flavored syrup and beat until smooth.

In small bowl, dissolve coffee with water.  Seriously, it only takes 1 teaspoon of hot water.  Add to cheese mixture.  Mix well.

Fold in whipped cream (set aside from earlier). Pour into prepared pan. Cover.  Freeze all day or over night.

Let stand at room temperature for 10 minutes and remove sides of pan before serving.  Optional:  Top individual slices with whip cream and a few mini chocolate chips.  This looks very pretty, but I'm not kidding, this cheesecake can stand on its own!

Mountain Mama's Beef & Cheddar Sandwiches

These are my take on Arby's, roast beef & cheddar sandwiches.  I created this recipe years ago when all of my six children were still at home with us and I wanted a less expensive version of Arby's that I could make myself at home.  These are amazing!

Ingredients:
1 - bag onion hamburger buns
3 lbs. ground beef
1/4 teaspoon salt
1 tablespoon dried onions (optional)
1 - 0.87 oz. envelope brown gravy mix
1 cup water
Velvetta Cheese (I use the Wal-Mart, great value brand.)
1 - 6 oz. bag French Fried Onions (also Wal-Mart brand)

Sauté ground beef over medium heat with salt and dried onions in large frying pan.  Drain grease.  Use that same frying pan to cook brown gravy mix with 1 cup water according to envelope instructions.  Add the drained, cooked, ground beef and mix. 

Open buns and broil for 1 minute.  Top each side with sliced velvetta cheese.  Do not be stingy with the cheese.  Broil another 2 minutes.  Be careful not to burn.  Add 1 scoop of beef mixture to one side of every pair of buns.  So, one scoop of meat for each sandwich. I like to use an ice cream scoop to pack the meat together.  Flatten/Shape meat to fit bun with a fork.  Top meat mixture with fried onions. Close each sandwich.  Makes 8 yummy sandwiches!
